I will gather and dry the herbs throughout the growing season and I usually end up making the blend late Fall. I adjusting according to taste, adding a bit more of this or that for taste as well as for colour and beauty. I commonly add some ginger and citrus peel for flavour, as well as being sure to include something astringent such as raspberry leaf, and for my taste buds often including a tiny bit of something bitter to round out the flavour profile.
